Carmel Chocolate Crunch Bar


80 club crackers 
1 cup butter
2 cups graham cracker crumbs
1 cup firmly packed dark brown sugar
1/2 cup milk
1/3 cup sugar
2/3 cup creamy peanut butter
1/2 cup semi-sweet chocolate morsels
1/2 cup butterscotch morsels
Sea SaltLine an ungreased 9X13-inch baking pan with foil, leaving an extension of foil on either end. Line the foil with 1 layer of club crackers, cutting to fit if necessary (in my 9X13-inch pan, the crackers lined up evenly without the need to trim). 

In a large saucepan, melt butter over medium heat. Add graham cracker crumbs, brown sugar, milk and sugar. Bring to a boil and boil for 5 minutes, stirring constantly. (Begin timing 5 minutes from when you see the first bubbles.) Remove from heat and spread half of butter mixture evenly over crackers. Place another single layer of crackers evenly over butter mixture, cutting to fit if necessary. Spread remaining butter mixture evenly over crackers. Top evenly with remaining crackers.

In a small saucepan, combine peanut butter, chocolate morsels, and butterscotch morsels. Melt over medium-low heat, stirring constantly. Spread evenly over top of crackers. Sprinkle slightly with sea salt.  Cover, and chill for at least 1 hour. Lift foil overhang and remove bars from pan. Cut into bars. Store in the refrigerator.

5-Minute Turkey, Avocado, and Hummus Wrap



Ingredients:

1 whole wheat tortilla

2-3 tablespoons red pepper hummus

3 slices low-sodium deli turkey

1/4 avocado, sliced

Pickle slices


Directions:

Spread tortilla with hummus, then layer on turkey, avocado, and pickle slices. Roll, then slice. Makes 1 wrap.

Kittencal's Banana Cinnamon Snack Cake or Muffins (Low-Fat)




Ingredients:


1 1/2 cups all-purpose flour
1/2-3/4 cup sugar (or to taste)
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup plain fat-free yogurt (can use low-fat yogurt)
3/4 cup mashed ripe banana
2 tablespoons oil
1 egg
1 1/2 teaspoons vanilla


Directions:


1.Set oven to 350 degrees F.

2.Grease a 8 or 9-inch square baking pan or line muffin tins with paper liners.

3.In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon and salt.

4.In a small bowl, whisk together yogurt, banana, oil, egg and vanilla.

5.Pour over dry ingredients, and gently stir with a spatula until JUST blended (do not over mix).

6.Spread the batter into prepared baking pan.

7.Bake for about 25 minutes, or until the top of the cake is light brown, and edges begin to pull away from sides of the pan (bake slightly less time for muffins).

8.Cool cake in pan on rack for 10 minutes.

9.Loosen sides of cake with a dinner knife or a spatula.

10.Invert cake right side up and cool completely.

11.Sprinkle lightly with powdered sugar.
